About 20 per cent of all Australians over the age of five go fishing at least once a year. Always a prize catch, Snapper (Pagrus auratus) inhabit southern Australian coastal waters. Murray Cod (Maccullochella peelii) , found throughout the Murray-Darling river system, are a fine sporting fish with great power and stamina. Brown trout (Salmo trutta), widespread in the lakes, streams and rivers of cooler regions, are the wiliest of the trouts. The largest Yellowfin Tuna (Thunnus albacares) caught on rod and reel in Australia weighted 124 kg and was landed off Bermagui in 1993. Excellent sporting fish with great fighting ability, Barramundi (Lates calcarifer) live in rivers and estuaries in the warm waters of nortern Australia.

The Australasian snapper (Pagrus auratus)or silver seabream, is a species of porgie found in coastal waters of Australia, Philippines, Indonesia, China, Taiwan, Japan and New Zealand. Its distribution areas in the Northern and Southern Hemispheres are disjunct.

The Murray cod (Maccullochella peelii) is a large Australian predatory freshwater fish of the genus Maccullochella in the family Percichthyidae. Although the species is called a cod in the vernacular, it is not related to the Northern Hemisphere marine cod (Gadus) species. The Murray cod is an important part of Australia's vertebrate wildlife—as an apex predator in the Murray-Darling River system—and also significant in Australia's human culture. The Murray cod is the largest exclusively freshwater fish in Australia, and one of the largest in the world. Other common names for Murray cod include cod, greenfish, goodoo, Mary River cod, Murray perch, ponde, pondi and Queensland freshwater cod.

The brown trout (Salmo trutta) is a European species of salmonid fish that has been widely introduced into suitable environments globally. It includes purely freshwater populations, referred to as the riverine ecotype, Salmo trutta morpha fario, a lacustrine ecotype, S. trutta morpha lacustris, also called the lake trout, and anadromous forms known as the sea trout, S. trutta morpha trutta. The latter migrates to the oceans for much of its life and returns to fresh water only to spawn.Sea trout in Ireland and Britain have many regional names: sewin in Wales, finnock in Scotland, peal in the West Country, mort in North West England, and white trout in Ireland.

The yellowfin tuna (Thunnus albacares) is a species of tuna found in pelagic waters of tropical and subtropical oceans worldwide. Yellowfin is often marketed as ahi, from the Hawaiian ʻahi, a name also used there for the closely related bigeye tuna. The species name, albacares ("white meat") can also lead to confusion: in English, the albacore tuna (Thunnus alalunga) is a different species, while yellowfin is officially designated albacore in French and referred to as albacora by Portuguese fishermen.

In Australia, such is the demand for the fish that a substantial amount of barramundi consumed there is actually imported. This has placed economic pressure on Australian producers, both fishers and farmers, whose costs are greater due to remoteness of many of the farming and fishing sites, as well as stringent environmental and food safety standards placed on them by government. While country of origin labelling has given consumers greater certainty over the origins of their barramundi at the retail level, no requirement exists for the food service and restaurant trades to label the origins of their barramundi.
